Do Not Display My Email Address on bottom of email you send

My Email Address is displaying at the bottom of the email you send me. Could that be taken OFF? I am receiving it just fine but I am also sending it to my blog and there it gets published to the whole world. Could you provide a software 'switch' that I can say ~ Don't Put That IN Your Email sent to me? And you would make that line disappear from the bottom of the emails I am sent?
